Majerija, Vipava Valley
For years we have been wishing for a hotel in the Vipava valley, so that our customers don't have to make a return trip to sample the cuisine at Zemono and Majerija. Now it can be a one way trip!
There are ten simply furnished bedrooms (twin or double beds, shower, luggage space) situated under the house. Each has a skylight - with a motorised blind - and is decorated in a herby theme. The furniture is solid oak and the total effect is like being immersed in light and nature. Very relaxing, undemanding and probably good for the soul.
What you might call a legend in its own lunchtime, Majerija epitomises the approach that so many Slovenians are bringing to the country's cuisine: take local produce and recipes and apply modern techniques to bring out the very essence of them.
Matej Tomažič is a chef of some considerable skill who is inspired by his immediate surroundings and the historic gastronomy of the region. He will bring you flavours and textures that will have you salivating weeks after you leave (as I write this I can still taste the best pasta I have ever eaten anywhere - including Italy).
The menu might seem a little bizarre, until you realise that it allows the kitchen to be as efficient with its produce as possible; only this way can they offer such precise cooking of ingredients that sometimes are indigenous to the surrounding hills, let alone this tiny country.
A unique, and life-affirming, experience.
